Will Pouch, the owner of Esperanto restaurant in Saratoga Springs, becomes sentimental when talking about the Doughboy, the baked savory pastry that wraps chicken, cream cheese, cheddar and colby cheeses and spices with pizza dough. Within a month of opening Esperanto at 4 Caroline St. in 1995, the restaurant introduced the Doughboy and it quickly became a huge success among the downtown Saratoga nightlife crowd looking for fast, hearty grub.
